Our kids love the pumpkin muffins that uses a can of pumpkin and spice cake mix. That recipe continues to be a favorite in our house. I stumbled across this similar twist on that idea and wanted to give it a try. I might actually like this recipe better than the spice cake mix pumpkin muffins.

Let’s Get Crafty!
Ingredients:
1 box yellow butter cake mix
15 oz can pure pumpkin
1/2 teaspoon cinnamon
1/2 cup water
Chocolate chips, optional
Preheat oven to 350 (we did 325 for higher altitude my mother-in-law recommended that seems to work well for us.)
Combine well and spoon into cupcake baking tins that were sprayed with non-stick spray. We added chocolate chips to half.
Bake 25 minutes (ours needed an additional 5 minutes.)

These were really good! I like the other pumpkin muffins too but these feel a little fluffier and lighter.
