Broccoli Cheese Soup

This soup is comfort food at its finest. There is something about weather changing that brings on all the comfy, cozy feelings. Enjoy!


Let’s Get Crafty!

Ingredients:
1 large onion, diced
3 stalks of celery with the leaves, diced
3 tablespoons butter
2 cups carrots, sliced
3 cups broccoli, chopped
4 cups vegetable broth
1 cup milk
16 oz velvetta, cut into small pieces

Sauté the onions in the butter for 5-10 minutes until the onions are soft.

Add celery, carrots, broccoli and vegetable broth. Bring to a low boil and simmer for 10 minutes gently stirring.




Take a cup of the hot liquid and add it to a little bowl with the milk to separately combine before adding into the cooking pot. Warming up the milk like this will prevent it from curdling.



Add in the velvetta and gently stir. Simmer another 10-15 minutes and add salt and pepper to taste.


I added some crispy jalapenos to mine for a little crunch and some heat.
