Mini Banana Bread Loaves

Our littlest kiddo has been asking for banana bread and it isn’t something we’ve made in a while so it seemed like the perfect time to put the ripe bananas in our fruit basket to use.  This recipe comes together super fast and was a big weekday hit.


Let’s Get Crafty!
Ingredients:
1 1/2 cup all purpose flour
1 tablespoon baking powder
1/4 teaspoon salt
4 extra ripened bananas
2 eggs
3/4 cup brown sugar
1 teaspoon vanilla

Preheat the oven to 350 (we did 325 for higher altitude)

Beat together the ripened bananas and the eggs. Add in the dry ingredients and mix until well combined. Then add in the brown sugar and vanilla.

Pour into 4 greased mini loaf pans.

Bake for 30-35 minutes.  It always surprises me that these mini loaves take this long but they do.

We checked ours at 30 minutes and gave them just a couple more minutes and they were perfect.
