Boursin Cheese Pasta

We’ve been talking more about the cookbooks for the kids as the oldest is now 17 and getting close to wrapping up his junior year of high school. We had something really good for dinner the other night and our middle kiddo was bummed about the amount of dishes. She said she would rather eat dinners when she grows up that don’t require a lot of dishes. That got me thinking… I’ll have a chapter in their cookbooks of meals that require a limited number of dishes. This recipe can go in that chapter!

This recipe is like a previous recipe I’ve posted that included chicken. I really liked that recipe too because I didn’t add pasta to all of the chicken, cheesy mixture so it could be a lower carb option. It was really good.


Let’s Get Crafty!

Ingredients:
1 cup cherry tomatoes
5oz round boursin garlic and herbs cheese
1/4 cup EVOO (just enough to cover the bottom of the dish you’ll be roasting in)
3/4 pound of cooked pasta of your choice
Fresh cracked pepper (amount unknown… this comes from your heart)

Optional Ingredients:
2 cups fresh spinach

Preheat oven to 425

Toss the grape tomatoes and EVOO into a 9×13 baking dish and add fresh cracked pepper. I then stirred it up so the tomatoes were evenly coated with EVOO. Make a spot in the middle to add in the cheese round. Once the oven is preheated, roast for 20 minutes until your tomatoes are bursting with happiness and the cheese is soft and toasted.


While this is roasting, get some water boiling and cook your pasta of choice according to the package. (Be sure to save some of the pasta water before draining.)

Once I took the tomatoes and boursin cheese out of the oven, I used a paper towel to remove some of the EVOO and then smashed the tomatoes with a fork (wear an apron or be extra gentle during this part.)



Combine the smashed tomatoes with the boursin cheese. It will look creamy and smell amazing!


Add in the cooked pasta and stir in some pasta water to help loosen it up some. I only needed a small amount this time.
