The charm about this meal is that you can toss all the ingredients into the crock pot and that makes it slide perfectly into my daughter’s request for more meals with less dishes. You can easily put it over rice or pasta to round out the meal.

Ingredients:
7-8 links of uncooked mild italian sausage
2 large onions, sliced
1 can of chili ready crushed tomatoes
2 peppers (we did orange and red), sliced
Handful of mushrooms, sliced
Put the sliced onions on the bottom of the slow cooker and arrange the mild italian sausage links on them. Then pour the chili tomatoes over the top. Cook on high for 4-5 hours.
You could also put the sliced peppers and mushrooms in at this point and truly cook it all together. I like them to hold a little texture so I sautéed them separately closer to mealtime.
