Cottage Cheese Blueberry Muffins

We bought blueberries that were so good that we bought more. This recipe includes cottage cheese for a little extra kick of protein.

Ingredients:
1 cup cottage cheese
1 cup fresh blueberries
1 1/2 cups of all-purpose flour
3/4 cup white sugar
2 teaspoons baking powder
1/4 cup milk
2 large eggs
1/4 cup butter, melted
1/4 teaspoon salt

Preheat oven to 375 (we did 350 for higher altitude.)


Combine dry ingredients in a large bowl.

Blend together cottage cheese, eggs and butter. Pour over dry ingredients.

Add in approximately 1/4 cup of 1/2 and 1/2 or milk to loosen the combined mixture up a little bit.


Gently fold in the blue berries and divide among muffin tins sprayed with nonstick spray.

This made 10 muffins for us and baked for right at 20 minutes.
