There’s something special about nachos that are baked in the oven until toasty. Then taking those nachos and topping them with chicken covered in slow simmered buffalo wing sauce is taking them to the next level.

Ingredients:
2 chicken breasts, diced into similar sized pieces
2 tablespoons butter
1/3 teaspoon garlic powder
1/2 cup celery, chopped
3/4 cup red hot buffalo sauce
1 large bag of tortilla chips
Shredded cheese – measure this with your heart
Queso – also has to be measured with your heart
Additional toppings of your choice: tomatoes, green onions, olives, etc.

Preheat the oven to 375.
Cook the chicken on medium/medium-high heat for a couple minutes on each side in the butter. Add in the garlic powder and chopped celery and cook another couple minutes.

Add in the buffalo wing sauce and stir to combine.

Let this simmer a few minutes and then reduce the heat to low and cover.

Spread out the tortilla chips on a large baking sheet covered with parchment paper. Spread the shredded cheese blend of your choice over the chips.

Top with queso. Ours is broken in three sections. One that will be cheese only, part with leftover ground chicken taco meat and then the other will be topped with the buffalo chicken.

Bake at 375 until the cheese is melty and the chips are toasty. We did ours for 6 minutes and then added another couple minutes. This goes really fast and tastes so good hot from the oven.

This was my birthday dinner and it was a big hit. A few years back on our middle kiddo’s birthday we had table nachos where we put down a disposable table cloth and put everything on the table. That was fun but there was a lot that ended up being thrown away. This felt like a good middle ground.
