Good morning and happy Tuesday. This recipe is a follow up to an egg bites recipes that my family has loved over the years. The difference is that this time I took the extra effort to blend the egg mixture rather than just whisking it. In the copycat recipes, they take the time to blend the egg mixture and the egg bites do look and taste closer to what you can buy at Starbucks.

Let’s Get Crafty!
4 large eggs
4 bacon strips (I used a generous spoonful of the Kirkland Bacon Crumples from Costco)
3/4 cup of cheddar cheese
1/2 cup 1% milk cottage cheese
1/4 fat free half and half
Use a blender to blend together the eggs, cheese, cottage cheese and 1/2 and 1/2 until smooth then stir in the bacon. Spray the egg pods with pam and then divide the egg mixture evenly among the pods.
Put the trivet that came with the instant pot at the bottom of the instant pot along with 1 cup of water. Gently set the filled pods on top of the trivet and water. Put the lid on and make sure the knob at the top is set to Sealing. Then select the Steam option and adjust to 8 minutes. Once that 8 minutes are up you are going to let it Natural Pressure Release for 10 minutes.
These were okay but we seemed to like the texture of not blending the cottage cheese better. I also think they were prettier without blending the cottage cheese… and you eat with your eyes first. 🙂
