Many great foodie stories start with… “I was at Costco and…” This is a story that starts like that.
I was at Costco and they had a three pack of Boursin cheese on sale. It was a great day because I was wanting to make a yummy cheese pasta. (We did and it was delicious. Click here for the recipe.) We used the other two cheese rounds to make this dip. The extra flavor packed into each Boursin helps the remaining ingredients be ridiculously easy.

Let’s Get Crafty!
Ingredients:
2 Boursin cheese rounds (we used a garlic one and a chive one)
3/4 cup shredded cheese
4 jalapenos, chopped (removing the seeds)
1 green pepper, chopped
1/2 cup cooked bacon, chopped
Green chiles for extra spice – I didn’t do that today and just wanted the jalapeno flavor
1/2 sleeve ritz crackers (I’m saying 1/2 sleeve because we did a full sleeve and it felt like too many crackers for me, so next time, I’ll just do 1/2 or even leave it out entirely for a tasty lower carb dip.)
Preheat oven to 375 and layer the ingredients as pictured below.

Bake for 10-15 minutes until the shredded cheese is melty and the Boursin is softened.

Stir until ingredients are well combined and top with crushed ritz crackers. Put back in the oven and bake until the crackers are nice and toasty. Another 5-10 minutes.

Hot out of the oven. So creamy and perfect with veggies, crackers or tortilla chips.
