Easy Pumpkin Waffles

Summer is coming and I’m ready for it. I love living in Colorado where we get to enjoy all of the seasons. My heart will always be especially partial to fall. We’re having pumpkin waffles today because we love pumpkin but also because when we did a deep clean of the pantry a couple weekends ago it came to our attention that we have 9 cans of pumpkin. 🙂


Let’s Get Crafty!

Ingredients:
2 cups pancake/waffle mix (we like Krusteaz)
1 1/2 cups of cold water
2 tablespoons vegetable oil
1 egg
1/3 cup pureed pumpkin
1/3 teaspoon pumpkin pie spice


Combine everything together and mix well. Cook in the waffle iron of your choice. We used the standard size today and this made 4 of the large four sectioned waffles.

These waffles were awesome! The texture is softer than what a waffle normally is with the pumpkin puree and I loved that about them.
