Good morning. As I sit here sipping my coffee, I’m reminiscing about how much our middle kiddo loved these and thinking that we should definitely make them again. While they don’t look Next Level Chef (which is her current favorite show), they were super tasty.
These mini pies are super easy to make and use premade pie crusts. They can be flexible for whatever filling you would like to include. We made some filled with strawberry and some with Nutella. Word of the wise… a little filling goes a long way.

Ingredients:
Pie crusts
Pie filling of your choice
1 egg
1 tablespoon water
Powdered sugar

Preheat the oven to 425 (we did 400 degrees for higher elevation. A huge THANK YOU to my mother-in-law for this baking game changer.)
See below for how we cut the pie crusts and the amount of filling we used. Next time I would use about half the amount of strawberry filling.


After folding them over like pictured below, use a fork around the edges to help seal them closed. I used a little too much filling, so some of it came out during this part.

Awwww…. the Nutella ones look cute because I knew at this point to use less filling.

Whisk the egg in a separate dish with a splash of water (around a tablespoon).
Then brush the egg wash onto the top of each mini pie using a kitchen brush. This step helps to give the beautiful golden crust during the baking process.
Bake at 400 between 18-22 minutes until the pie crust is nice and toasty. (Generally, 425 degrees but lowering 25 degrees for higher elevation.)
