Corn Dip with Green Chiles

There are many versions of this dip making the rounds on socials right now and this is my spin on it. I really like the kick of our spicy green chiles and using the ranch seasoning mix to add layers of flavor without needing to raid the spice rack for several different spices.

You may have noticed a trend with me over the years of blogging (which is hard to believe is over 10 years!) and that is… I love great food and also cherish my time. This dip creates the perfect balance.


Let’s Get Crafty!

Ingredients:
2 cans mexicorn, drained
1/2 can rotel, drained
1 cup light sour cream
2 tablespoons ranch seasoning mix
8 oz shredded cheese
green onions, optional
green chiles, optional

Combine everything together except the optional ingredients.

Once combined we pulled out some for the kids.


Then add in the green chiles and stir together. Pour into a dish and sprinkle with green onions.


We let ours chill out in the fridge for a little over an hour and it was perfect. Yay for a quick, fun dip!

Serve with chips or veggies.
