Sausage Pinwheels using Camping Pie Irons

Here’s our last recipe to share from our camping trip. This was my husband’s favorite thing we made with the pie irons.


Let’s Get Crafty!

Ingredients:
3 extra large tortillas
1 lb breakfast sausage
5 eggs
dash of half and half or milk
salt and pepper
green chiles/diced jalapenos, optional

Divide uncooked sausage into 3 even sections. Spread 1/3 of the sausage evenly onto each of the large tortillas.

Roll up each tortilla and slice into pinwheels about 1 1/2 to 2 inches thick.


Whisk together the eggs with salt and pepper and a little half and half or milk similar to how you would for scrambled eggs.


Warm the irons over the campfire grate.

Coat both sides of the iron with butter and fill with 3 pinwheels and diced jalapenos if you like it a little spicy.

Cook on the campfire grate initially for 5 minutes.



Then add egg and cheese and cook another 5-7 minutes until done.


Hot off the fire.
