This is a wonderfully comforting dinner that is perfect for a Sunday where time seems to move a little slower as we try to take in all the good thoughts and feelings. The creamy ricotta makes this reminiscent of lasagna and creates a feeling of decadence.

Let’s Get Crafty!
Ingredients:
12 oz pasta of your choice
1 lb mild italian sausage
20oz jar of pasta sauce or marinara sauce
15 oz ricotta
2 eggs
2 cups mozzarella cheese (we used a colby/jack mix)
1/2 cup grated parmesan cheese

While pasta is cooking, preheat the oven to 350.
Fully cook the italian sausage and then combine with marinara sauce.

Combine eggs, ricotta and 1 cup mozzarella cheese. Add to fully cooked pasta and stir gently to evenly distribute.
Layer into a baking dish:
1/3 sausage/sauce on the bottom
1/2 pasta on top of the sauce
1/3 sausage/sauce
The rest of the pasta
Top with the last of the meat sauce
Final layer is the 1 cup of mozzarella

Cover and bake 45 minutes.
Uncover and bake another 10-15 minutes until the cheese is melted.
Remove from oven and wait 15 minutes before serving.

This was a perfect Sunday dinner for us a couple weeks ago. Thanks for stopping by. Hope you are having a nice day.
