Gingerbread Cookies

My daughter and I have been wanting to make gingerbread cookies for a bit so we bought the molasses a little while back and decided this particular day was the magical day where we would watch a movie and make gingerbread cookies.

These cookies were soft and chewy. This recipe made about 4 dozen little cookies so we had a lot of extras and my daughter found the sweet spot of 15 seconds in the microwave to warm them up ever so slightly.

(Side note: we watched the movie Goonies which felt a little different watching it as a Mom sitting next to my daughter than it did as a kid watching it years ago. There were a couple side-ways glances from the oldest with raised eyebrows. Lol. Still fun but they may think I’m a little cheesier than normal for liking the movie.)


Preheat oven to 325

Ingredients:
3/4 cup unsalted butter, softened
1 cup white sugar
1 egg
1/3 cup molasses
2 1/4 cup flour
2 teaspoons baking soda
1/2 teaspoon salt
1 teaspoon ground ginger
Extra white sugar for rolling

Combine the butter, sugar, egg and molasses in a mixer until well combined.

Add in the flour, baking soda, salt and ginger. Mix well until the cookie dough forms.

Roll about 2 tablespoons of cookie dough into a ball and then roll in the extra white sugar. Place on the cookie sheet and slightly press down. Our middle kiddo used a fork on them like we do with peanut butter cookies.

Bake at 350 (325 for high altitude)

We did 10 mins for our first batch and then 9 minutes for our following batches with the pizza stone already hot.
