I love soup and on this day I had a mission for two things – (1) not going to the grocery store and (2) make soup for dinner. We were out of fresh potatoes and we didn’t have diced frozen potatoes on hand so we used tater tots and it was tastier than I expected. My son was a fan but my daughters didn’t like it as much as I hoped they would. I like the added texture from the tater tots after they break down.

Let’s Get Crafty!
Ingredients:
1/2 onion, diced
1 tablespoon butter
4 cups tater tots
2 cans chicken broth
1/2 teaspoon garlic powder
1/4 teaspoon onion powder
Salt and pepper to taste
1/2 cup milk
1 cup shredded cheese of your choice
2 cups water, divided
Toppings of your choice (bacon bits, shredded cheese, green onions, etc.)
Saute the diced onion in butter until tender.
Add the chicken broth, tater tots and seasonings. Cook on medium heat covered for 10 minutes or so until the tater tots are cooked. You will want to be close by to stir several times and we needed to add more water during this process.
Once the tater tots are cooked and the soup is the consistency you like, pour 1/2 cup milk in a bowl and add some soup to it to temper the milk. Then add the milk to the soup along with the shredded cheese.
Serve in bowls with the toppings of your choice.
