Pumpkin Sheet Pan Pancakes

I found this little gem hanging out in my drafts and had to share it. We love pumpkin and these were really good. The texture of them is a little softer than the other sheet pan pancakes we like to make but we’ll certainly be making these again.


Let’s Get Crafty!

Ingredients:
2 1/3 cups pancake mix
1 1/2 cups milk
1/2 cup pumpkin puree
1 egg
1 tablespoon vegetable oil
1 teaspoon pumpkin pie spice
Toppings to sprinkle (we did some milk chocolate chips on half)

Preheat oven to 400

Put parchment paper down on the large sheet pan (ours is 15x10x1 in.)

In a large bowl, combine everything but the chocolate chips. The batter will still be a little lumpy.

Pour the batter onto the parchment paper and spread out evenly.

Sprinkle with chocolate chips (optional.)

Bake until cooked through. Ours was perfect after 8-9 minutes.
