Christmas Prime Rib

We’ve made prime rib many times over the years, especially around Christmas time. If you’ve wanted to try it but aren’t sure because you think it might be tricky… here’s an easy peasy recipe that we will be using again tomorrow!

BUT! Here’s the thing to prepare yourself for if you’re making a prime rib in the oven: The prime rib is in charge of the oven for the duration. There are specific temperature changes that need to be made and you can’t open the oven from the time the roast goes in to the time it comes out.

BUT! (Yes, another but.) This also means that dinner preparation gets streamlined because you aren’t making a bunch of different sides to go in and out of the oven like you might with ham or turkey Christmas dinners.


Let’s Get Crafty!

Ingredients:
5lb standing rib roast
1 tablespoon of beef seasoning mixture

Beef Seasoning (only 1 tablespoon will be used for this recipe and the rest is saved for future use):
1 cup salt
1/4 cup black pepper
1/4 cup garlic powder

Have roast stand at room temperature for at least an hour.

Preheat oven to 375 degrees and rub the roast with 1 tablespoon of the seasoning. Place the roast on a rack in the roasting pan with the rib side down and the fatty side up.

Roast at 375 for 1 hour.

Turn the oven off.

Leave the roast in the oven but do not open the oven door for 3 hours. Yep! 3 hours.

After the 3 hours, turn the oven back to 375 for another 30 to 40 minutes.

Important: Do not remove the roast or open the oven door from the time the roast is put in until ready to serve.
