Green Enchilada Sauce Egg Bake

If you’re looking for something to mix up one of the last Fridays during lent- here’s a great option!

Green enchilada sauce is a wonderful addition to this egg bake. Putting it in the baking dish first helps it reduce down while baking in a way that enhances the flavor even more. This recipe is a keeper!

Ingredients:
3/4 cup green enchilada sauce
1/4 bag of tortilla chips
2 cups cheddar cheese or the blend of your choice
6 eggs
1/2 cup cottage cheese
1/2 cup green chiles, optional

Preheat the even to 350.

Pour the green enchilada sauce in the bottom of the baking dish.


Evenly spread the chips out. We used the bottom of the chip bag and it was a perfect way to use a bunch of the broken pieces.


Evenly spread the cheese over the chips.

Whisk together the eggs, cottage cheese and green chiles and pour over the cheese.


Bake at 350 for 20 minutes until the eggs are cooked through.
