Here’s what we had for the week leading up to the Christmas weekend. 2022 has flown by and 2023 is knocking on our doors.
I missed taking a couple pictures during this week. That isn’t really like me… it has been a couple hard weeks with sprinkles of wonderfulness mixed in.
Sunday – Snacks for a Christmas Celebration
We made some buffalo chicken dip using one of my favorite freezer meals for buffalo chicken wraps.
We were celebrating an early Christmas get together after church on and it was perfect to pop the freezer meal in the crockpot before church and then shred up the chicken after. After shredding the chicken – I added the block of cream cheese, cheddar cheese and more wing sauce on top. I put ours in the oven for a bit to give it that baked deliciousness.

Monday – Ham Sammies
We made these on Sunday-+ evening and tossed them in the oven after work. Here’s a link to the recipe. If you haven’t tried these – you need to!
Tuesday – Pita Pizzas
We had some pita bread to use up and thawed sausage in the fridge to cook up. Pizzas are always a dinner win from the kid’s point of view. Here’s a picture of mine.

Wednesday- Green Enchilada Chicken Soup
I have a recipe started for this one and haven’t finished it yet. The flavor of green enchilada sauce is so good in this recipe. Yay for tortilla and taco soups!
Thursday – Sauteed Onions, Mushrooms, Peppers and Sausage with French Fries
My husband made this and there is no specific recipe. Here’s a link to how to make the french fries in the air fryer AND it also includes the magic sauce that I love to dip them in.
Whenever I eat sauteed sausage and veggies, it makes me think of my Aunt Niece that would make sauteed sausage and potatoes at our summer family reunions. One of my favorite things about food is the way it invokes special memories and the feelings that go along with them.

Friday – Steak Fajitas
Yay for the time of year when prime ribs are on sale. We like to buy a couple and cut them into steaks to freeze and use throughout the year. It makes my heart happy to be grilling steaks in the summertime and feeling like the winter deal still lives on.
