Happy New Year! If you’re looking for some freezer meals to kick off your new year, here are some of my favorite chicken ones.
Yay for a chicken breast sale at Costco! I love that the kirkland brand chicken breasts don’t need a lot of trimming and cleanup to toss into a freezer meal. I bought three packages (about 24 lbs in total).
I made freezer meals with about half of the raw chicken and then used the instant pot to cook the other half in a couple batches.

While working on the following quick and easy raw chicken recipes – I got the chicken going in the instant pot in two batches. For 6 chicken breasts – I added the wire rivet at the bottom, 6 chicken breasts and about a cup of water. I set it to manual for 30 minutes and jumped into the other meals. Once that was done – I started another 8 chicken breasts using a similar method and set the instant pot for 40 minutes on manual.

Buffalo Chicken Wraps
So easy! This is one of my favorite classics.
– 3 uncooked chicken breasts
– 1 cup buffalo sauce
– 1 1/2 tablespoons ranch seasoning mix
Add the 3 ingredients to a labeled and dated freezer bag. Cook on low 6-8 hours on cooking day.
Ranch Tacos
These are so good and we haven’t had them in a long time, so I made two of these today.
– 3 uncooked chicken breasts
– 2 tablespoons ranch seasoning
– 1 can rotel
– ¼ c of olive oil
– ¼ c water
Add all ingredients to a labeled and dated freezer bag. Cook on low 6-8 hours.
Chicken Fajita Wraps
– 4 uncooked chicken breasts, sliced
– 2 peppers, sliced
– 1 can rotel
– 2 tablespoons taco seasoning
– 1 large onion, sliced
I like to layer this one in the bag so that the onions end up on the bottom of the crockpot, so i put the onion in last. I put them in the bag like this: peppers, sliced chicken, rotel and taco seasoning and then the onions. On cooking day – cook on low for 6 to 8 hours.
Chicken Tacos/Flautas/Burritos
This is a flexible and ridiculously versatile recipe that can be used for however the wind takes you on cooking day.
– 3 uncooked chicken breasts
– 1 cup salsa or 1 can rotel
– 1 teaspoon cumin
– 1/2 teaspoon garlic powder
Add everything to the freezer bag. On cooking day – toss in the crockpot and cook for 6 to 8 hours.
Creamy Mushroom Chicken Pasta
– 3 uncooked chicken breasts, diced
– 2 teaspoons italian chicken
– 1/2 onion, diced
– 8 oz mushrooms, sliced
Cook on cooking day around 6 hours. When dinnertime is getting close, shred the cooked chicken. Then add in cooked pasta of your choice and monterey jack or mozzarella cheese with 1/ cup half and half. Stir until cheese is melted and everything is well combined.
Chicken Cordon Blue Packets
– 3 chicken breasts, cooked and diced
– 1 1/2 cups diced cooked ham
I’m going to freeze the chicken in a gallon ziploc and then put the ham in a smaller ziploc in a smaller ziploc inside the gallon ziploc to keep them together and easy to find. Click here for the recipe on cooking day. I’ll follow the same idea and go into the recipe with the chicken and ham ready to go.
