Sunday – Green Chile Smothered Beef and Bean Burritos


I still wasn’t feeling great and this was a tasty way to end the day to get ready for what was going to be a super busy week. Here’s a link to our favorite green chile recipe from a Valentine post 6 years ago. Hard to believe I’ve had a blog that long. Time flies when you’re having fun and talking about crafting and food.


MondayPhilly Cheesesteak Hamburger Helper


This is a freezer meal that uses precooked hamburger and is super quick to get on the table. My husband liberally added the cheese and the kids loved it. Even our middle kiddo that seems to be hit or miss with cheese.

The elbow pasta was cooked right in the instant pot aura rather than needing to dirty another dish and that’s a win win in our house.


TuesdayTaco Tuesday


The kids all made walking tacos. My husband made guacamole to use up some avocados and we made soft shell tacos. We cooked up the Costco tortillas from the fridge section that you only have to cook a couple minutes on each side. They are soooo good. I promise mine has some taco meat in there… just hard to see around all the other goodness added to the top.


Wednesday – Leftovers

I had to work late tonight and the kids had leftovers from Monday night. I wasn’t super hungry at that point and had one of those “adult lunchables” that had salami and genoa cheese.


Thursday – Shrimp Alfredo


I needed to work late again and my husband cooked an amazing shrimp alfredo for dinner. The shrimp was cooked perfectly and had the blackened feel with the seasoning.
