What did we eat for dinner this week? 02.04.23

I don’t know about you… but this week flew by! Thinking back on it now feels like a blur. It was a yummy week at our house and most of the credit goes to my husband.



Sunday – Tortilla Soup (my pick) and Pizza Pinwheels (my husband’s pick)


I tossed my current favorite tortilla soup recipe into the crockpot before church. Click here for the recipe. I’ve used the last of my individual freezer portions that I love to have on hand so I was happy Mark wanted to also make something else.

I mentioned making pizza pinwheels a some point during this last week and Mark remembered. We had a mishap with the foil so it was a pain to get the pinwheels off. I don’t usually put them on foil and wanted to give it a try to make cleaning the baking sheet easier. It was a fail.




Monday – Baked Ranch Pork Chops


Pork chops were on sale so I grabbed a few packages. ‘Tis the season to take advantage of sales (isn’t that every season and all the days?) Click here for the recipe. We haven’t had these for a while and I forgot how much I like them. The ranch seasoning is my favorite part.



Tuesday – Chicken Cordon Blue Casserole


This is so decadent and delicious. It is not healthy at all but if you are looking for comfort food at its finest… this fits the bill. Click here for the recipe. My husband also made chile rellenos… so good.



Wednesday – Leftovers

I needed to work late again tonight and the kids were in bed when I got home. In the morning Em said they had leftovers. I had one of those fun adult lunchables that I really like.



Thursday – Quesadillas


This was a freezer meal with an Asain flair. The hamburger was precooked and I added in spices and seasonings similar to ground chicken lettuce wraps along with some green onions. I love having fully cooked hamburger freezer meals on hand because we can usually throw dinner together fast with the help of the instant pot. The girls liked this when we had it before but they weren’t a fan tonight.



Friday – Grilled Pork Chops

My father-in-law and mother-in-law are visiting this weekend to celebrate her birthday and my husband seasoned up some pork chops to grill for dinner. Unfortunately, I forgot to take a picture with all the craziness of the evening. I love when there are grilled dinners sprinkled in throughout winter.
