March has arrived. Only one more week until time change… which seems crazy. Ready or not… we are about to spring forward. It’ll be great to have more light in the evenings.
Sunday – Grilled Drumsticks

Costco has seasoned drumsticks on sale for a ridiculously good deal. I bought a package and froze some that we are using up for this dinner. (Don’t worry… flash forward to buying more before I officially posted this because these were grilled so amazing and the deal is just too good to pass up with food prices these days.)
Monday – Chicken Taquitos

This is such a quick and easy dinner when you bring freezer cooking and the crockpot into the picture. It is cooked shredded chicken with some taco seasonings and/or salsa with cream cheese added once that is fully cooked, That is wrapped in a small tortilla to “fry” in the air fryer and get nice and toasty. This is one of my favorites.
Tuesday – A1 Meatballs

True story here… I didn’t use a recipe and just threw three together with a large bag of frozen meatballs from Costco and hoped for the best. However, I DID follow the same rules here about making sure I was layering the freezer bag the way that I liked. Click here to see how I like to do it.
To make these I first divided up the large bag of meatballs between three galloon size freezer bags (probably around 25ish oz each), Then I added about 3/4 cup of A1 steak sauce and about 1 cup of beef broth to each of the bags.
Wednesday – Chicken Cordon Blue Casserole

This is one of the freezer meals that I thew together when I was taking advantage of Christmas ham sales. I added some pasta this time to help bulk it up and it was such a hit that the kids wanted to take it for leftovers to school for lunch. When using the pasta, I combined everything together well before baking rather than using layers.
Thursday – Spaghetti
I missed getting a picture of this one but the kids were definitely happy about it. Spaghetti seems to be a key to dinnertime happiness for them.
Friday – Baked Frozen Shrimp
Not too wild and crazy and I didn’t even get a picture. The end of the day took a turn that I didn’t expect and I wasn’t quite myself this evening (no picture two days in a row? what?)
