Banana Bread with White Chocolate Chips

Do you have things you really want to do but it seems hard sometimes to find the pocket of time to match with the energy level to do it? For me… that is making banana bread. I’ve been freezing bananas to save for the day the stars aligned. It happened on this day and truly filled my bucket.

We had a couple bananas that were perfectly ripened for banana bread and a stash in the freezer. I don’t usually add chocolate chips to it… but it sounded good today so I went with it.


Let’s Get Crafty!
Ingredients:
1 1/2 cup all purpose flour
1 tablespoon baking powder
1/4 teaspoon salt
4 extra ripened bananas
2 eggs
3/4 cup brown sugar
1 teaspoon vanilla
3/4 cup white chocolate morsels

Preheat the oven to 350

Beat together the ripened bananas and the eggs. Add in the dry ingredients and mix until well combined. Then add in the brown sugar and vanilla. Once all is well combined – stir in chocolate chips.

Pour into a greased bread loaf pan.

Bake for 45 minutes and check. We needed another 10 minutes and I covered it with foil at this point so the top wouldn’t be over browned.
