July has flown by and I haven’t been setting aside time to write. Does anyone else feel like July is an odd feeling month of the year? We jump from activity to activity and do fun things in the sun while also doing the things that need to be done. We are on the cusp of needing to get those school supplies bought while also trying to savor every last drop of summer before fall arrives.
This is a mixed basket for me. Autumn and Fall are my favorite but watching the sunshine and happiness that summer brings out in our kids steers me towards loving this season too.
We have a pretty chill weekend on the books and I’m hoping to sneak in some writing time.
Sunday – Pork Stacked Enchiladas

Yay for Sunday Funday lending itself to being able to spending a little extra time making dinner.
Monday – Smash Burger Tacos

These were pretty darn tasty. These went viral over the summer. Stay tuned for a post on how we made these. I initially tried the ways that I had seen and then changed it up.
Tuesday – 4th of July BBQ

We brought home more homemade brats from our local grocery store for dinner and I wanted to try some of each flavor (italian sausage, philly and jalapeno/cheddar.) We also had bacon ranch pasta potato salad along with cornbread salad. While waiting for dinner we were snacking on a veggie tray (because all great parties new one!) and dips. All wonderful and so very yummy.
My sister-in-law made the cornbread salad and it was Ah-MAZ-ing! It was wonderful to get to spend the holiday with them.
Wednesday – Cheesy Hamburger Helper

This is still a go-to when I want to make sure that the kids eat a great dinner. I love precooking the hamburger with a couple other ingredients and popping into the freezer to easily have dinner ready quickly on another day. With the help of the instant pot, of course.
Thursday – Cheeseburgers

We had extra burgers from when we went camping and my husband really enjoyed them. This was a great opportunity to finish up the potato pasta salad from our 4th of July BBQ.
Friday – Beef Tacos

We took some help from our friend the slow cooker today to cook a roast with taco seasoning and some rotel while we were working and running in different directions. We also had some avocados ready to be used up and they paired with it perfectly!
