When our local grocery store had beef on sale, I bought extras to freeze for future meals. Usually I make them into freezer meals when I buy them on sale but I think I didn’t have any mojo for that on this particular day and decided to slice it and then freeze it for it to be a future Melissa activity.

Let’s Get Crafty!
Ingredients:
2 lbs beef, sliced (ours was a shoulder roast)
3 small onions, sliced
1 packet of italian seasoning mix
1 cup beef broth
2 peppers, sliced
I tossed everything but the peppers into the crockpot on low for 7 hours (then it shifts to warm until we get home.) Our beef was frozen, so if you are cooking it from fresh, it might take less time.
We toasted some bread with butter and garlic powder and sauteed some peppers to add to the sandwiches. Some sauteed mushrooms would also be amazing to add to this.
I generally always cook the meat from frozen because I think it stands up to the crockpot better because we are away from home all day. The peppers are done separately because they have a hard time standing up to cooking all day. When possible, I’ll slice them in the morning and toss them on top in the crockpot the last couple hours but that timing didn’t work on this particular day.
