Zuppa Toscana

This has been on my bucket list to make for a while but I knew it was something the rest of the family wouldn’t be interested in so I wanted to wait until I had an evening by myself. That evening came and I made this. It was was warm and cozy on a cold winter night of wrapping presents and watching Christmas movies.


Let’s Get Crafty!

Ingredients:
1 lb. ground sausage
1 small onion, diced
1 tablespoon minced garlic
1/4 cup cooked bacon
1/2 teaspoon Italian seasoning
6 cups low sodium chicken broth
3 cups diced potatoes
1 1/2 cups half and half
2-3 cups kale, roughly chopped

Cook the ground sausage and diced onion until the sausage is fully cooked and the onions are softened.

Add minced garlic and cooked bacon and stir until combined. Sauté together for another couple minutes.


Add Italian seasoning, chicken broth and diced potatoes. Bring to a boil and then decrease cooking temp to medium heat and simmer for another 15-20 minutes until the potatoes are tender. I diced my potatoes on the larger side, so the cooking time will depend on how large your diced potatoes are.


Put 1/2 and 1/2 in another bowl to add some of the hot soup to so it can be tempered. This will help to stop the dairy from curdling.

Then add that bowl and the chopped kale to the soup pot and simmer for another 5 minutes or so until the kale is softened but still holds some texture.
