These are soooo good! My husband has made them with pork and brisket. I think the brisket ones might be my favorite but both are really good.

Ingredients:
Jalapenos, cored with the seeds removed
Cream cheese and/or shredded cheese
Fully cooked smoked brisket or pork
Bacon (one slice per jalapeno for larger ones but smaller ones might only need 1/2 slice)
Stuff each of the cored jalapenos with a combination of cheese and meat then wrap each one wit the bacon. Place on the smoking rack with the bacon ends on the rack.
Smoke at 325 for one hour.
Then flipped and smoke another 50 minutes.
Then add the BBQ sauce (optional) and smoke a final 10 minutes.

We tried some with and without BBQ sauce. The ones with BBQ sauce were really good because that 10 minutes caramelized the sauce and took them to the next level. We used Famous Dave’s Devil Spit.
