My husband made these a while back as a part of our game day snacks. The layers are made in a clever way and he looked like he was having fun putting them together.

Mix until well combined:
2 lbs ground sausage
3 jalapenos, finely diced
2 tablespoons cilantro, finely chopped
2 tablespoons green onions, thinly sliced
1/4 cup shredded cheese
Take six extra large, wrap size tortilla and lay them out together to cut into large squares (essentially just cutting off the rounded edges.)
Start with a tortilla on the cutting board and then spread out an even layer of the meat combination. Lay the next tortilla on top and repeat through the layers.

Cut the stack into even sized rows and then turn each on their side like in the picture.
Put three skewers through for three sections and cut into separate into three long pieces.
Smoke for a total of one hour as follows: 300 for the first 15 minutes and then at 350 being sure to flip every 15 minutes for 45 minutes.
