We’re always on the lookout for a new twist on grilled chicken. This recipe is a keeper! We’ve made this a couple times now and it has been great with a salad or alongside potatoes.

Ingredients:
6-8 boneless skinless chicken thighs
1/4 cup EVOO
1/2 can mild green chiles
1/4 cup fresh lime juice
1 heaping tablespoon minced garlic
1/3 teaspoon ground cumin
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 cup salsa verde
Toss everything in a gallon size bag and stir to combine then refrigerate to marinate at least a few hours. It’s good to move around the bag every couple hours to redistribute the flavors. On this day we made three packages, we put one in the fridge for dinner the next night and put two in the freezer.
People that know my husband and I well know how much we love spicy food and may chuckle that we are using mild green chiles in this recipe. We’re hoping that over time our kiddos may come to enjoy these flavors if they have more opportunities to have them without strong heat. ❤
