Pizza Pockets in the Air Fryer

It’s been so hot that we’ve been using our air fryer more and cooking outside more. These are super simple and were really good. They do take a little time with multiple batches if you are making them for a family depending on the size of your air fryer.


Ingredients:
2 premade pizza crust packages (this made 8 for us in total)
1 cup ricotta
1/2 cup pizza sauce (plus more for dipping)
1 egg
Toppings (we did pepperoni, cooked sausage and a variety of veggies)

Preheat the air fryer to 350 degrees.

Stir together the ricotta and pizza sauce and set aside.

Whisk together the egg with a splash of water for an egg wash and set aside.

Unwrap and roll out the pizza crusts. Using a pizza cutter, cut the rectangle into 4 equal rectangles.

On one half of the rectangle, add the ricotta and sauce mixture and the other topping you would like.


Fold the half without toppings over and other and use a fork to close the edges.

Use a brush to add EVOO to the air fryer basket so they won’t stick and then set the pizza pockets in. (Our air fryer fit 2 pockets at a time.)

Once they are in the air fryer, use a knife to cut a couple ventilation slits into the top.

Brush the tops with the egg wash and then air fry at 350 for 10 minutes.

Flip and brush with egg wash again and air fry another 4 minutes.
