Baked Breakfast Sandwiches

Freezer cooking in our house looks different these days than it used to. We don’t do a lot of dinners but we do still try to find little ways to enjoy something now and freeze some to help our future selves. These breakfast sandwiches are just the ticket for that.


Preheat the oven to 350.

Ingredients for the sheet pan eggs:
8 eggs
1 cup cottage cheese
1/3 cup milk

Optional toppings:
Everything bagel seasoning
Diced peppers

Other ingredients:
12 pack of english muffins
Sliced cheese of your choice
Meat of your choice (we did a variety of sausage, ham and bacon)

Whisk together eggs, cottage cheese and milk. Spread it out on a parchment paper lined large baking sheet. Add additional toppings until your heart is content.

Bake at 350 degrees for 16-18 minutes.

While the eggs were cooking we toasted the english muffins.


Also while the eggs are cooking, you can layer up the meat and cheese onto the toasted english muffins. We’re using colby jack sliced cheese this time and they were great warmed up from the freezer too.


Add the egg portion to each and put the other half of the toasted top on.


These froze beautifully. I think my son said they took about 2 minutes each. We did 90 seconds the first reheat day and that wasn’t enough.
