Street Corn Dip on the Smoker

We haven’t tried a new dip in a while and I have been wanting to give this a try. This is my version of street corn dip. The jalapenos we had on this day gave it the perfect amount of heat.


Ingredients:
2 cans of corn of your choice
1 block of low-fat cream cheese
8 oz pepper jack cheese, shredded
1/3 cup green onions, chopped
Colored peppers, chopped
2 jalapenos, cored and chopped
Slap Ya Mama cajun seasoning – we started with 1 teaspoon and then I added a little more (one of our cans of corn included some seasoning that I didn’t want to overpower, if it hadn’t then I would have done more of this.)


Toss everything into a foil pan and stir to combine well.

Cook on the smoker uncovered at 225 for an hour.

Stir and then cook another hour.
